I don't have much time to post today, but I'll leave you with a holiday recipe that is crazy easy, crazy delicious, and perfect as a last minute holiday gift. I just made these for the first time this year, and they are to die for. Just make a batch of these Cookie Dough Truffles, and just "let the magic happen" as my brother-in-law Rich would say.
Cookie Dough Truffles
1/2 cup butter, softened
1/2 cup sugar
1/2 cup brown sugar
splash of milk
1 1/2 cups flour
1/2 tsp salt
2 cups mini chocolate chips
1 (12 oz) bag semisweet chocolate chips
1 1/2 tbsp canola or vegetable oil
Mix butter, sugars, and the splash of milk until combined. Add in flour and salt, and mix to combine. Stir in mini chocolate chips. Roll into 1 inch balls, and place on a foil lined cookie sheet. Refrigerate for about an hour. Melt about 3/4 of the bag of chocolate chips (you can always add more later if you need more) over a low heat until completely melted. Stir in oil, and mix well. Dip balls of cookie dough into chocolate to coat completely, and shake off any excess. I have found the best method is to use two forks to dip and shake. Return balls to foil, and refrigerate until hardened. Package up as is, or adhere some sprinkles or dots to the very top with a little melted chocolate to dress them up a bit. Get fat jeans out of closet. Enjoy!
